Skillet Chicken Parmigiana

This weekend I made Skillet Chicken Parmigiana, an all time favorite dish of mine every time we go out to an Italian restaurant. I was super nervous because of the fact that I was not only cooking for me, the hubby and the kids, but also my mother and sister.
I always want to impress my mom, so I had more motivation then ever.
Starting off we had to reshape the chicken a bit, so hubby jumped in and helped by flattening the chicken breasts for me.
While he beat the crap out of the chicken, I myself beat 3 eggs into one bowl and mixed the bread crumbs and parmesan cheese together.
Then came the hard part, dipping the chicken in the egg, then bread crumb mixture, then to the frying pan. It’s been such a long time since I’ve fried anything, so I forgot that bare skin is not a good thing! I must have burned every possible surface of skin I have. (Including my toes!)
The pan I was using wasn’t big enough to cook more than 1 chicken at a time, so I had to cook one, put it to the side and cook another, this was a very time consuming task.
(Note to self, try to clean out the pan after each chicken, otherwise burnt pieces of the mixture will stick to the next piece of chicken.)
After probably 30 minutes of prep and cooking I was done! My sister and I decided to make a display plate for my final picture, and I must say we did pretty good! Lol
The chicken was awesome! I was so proud of myself! I included some angel hair pasta to finish off the plate, and voila, grub on time!
For taste, I give it a B (because of burnt pieces of seasoning) and for presentation, oh yes I give it an A!
Ingredients:
Boneless, skinless chicken breasts
Italian style dry bread crumbs
Grated Parmesan Cheese
Egg(s)
Olive or vegetable oil
Spaghetti Sauce
Shredded Mozzarella Cheese
